Gulab Jamun (Sweet Dish)

Welcome!! back to seemassmartkitchen . I’m Back with a new recipe of Gulab Jamun. Make Gulab jamun with “khoya” or “Milk Powder”. So, Basically Gulab jamun is a ’round – shaped’ Indian sweet made with “Khoya” or “Milk Powder”. These round shaped khoya balls are deep fried in ‘Oil’ or ‘ghee’ . After that we already made a sugar syrup , the deep fried balls were dipped and rested in sugar syrup until it absorbs syrup and turns soft/moist. Gulab Jamun is very special desert for Indians. Indians make Gulab jamun on special occasions and festival celebration.

Instructions to make Gulab jamun step by step :

First of all know , How to make khoya?

  1. Firstly take a heavy base non-stick deep frying pan. and add 1 tbsp ghee after that add 3/4 cup milk.

2. Whisk milk and ghee properly make sure that milk and ghee combined well.

3.Now add 1 cup milk powder.

4. Keep on low flame and whisk it well continuously.

5. The mixture starts thicken.

6. After 8 to 10 min the mixture starts to saperate from the pan.

7. Keep mixing until it forms a chunk.

8. Finally Your khoya is ready, now left it to cool down completely.

Now let us know How to make Gulab jamun dough ?

  1. Once the khoya is cooled completely, take the instant khoya and crumble it well. you can use market brought khoya (200 grams) as well.

2. add ½ cup maida, pinch of baking soda and combine with khoya properly.

3. Ad 3 tbsp of warm milk.

4. Mix gently and make a soft dough without kneading hard .

5. Firm a soft dough adding milk if required. keep aside and rest the dough for 10 minutes.

Lastly know about How to make sugar syrup?

  1. Take a pan add 1 & 1/2 cup of sugar.

2 .Also add 3 pods cardamom, ¼ tsp saffron.

3. Stir and dissolve sugar in 1½ cup water.

4. Boil the sugar syrup for 8 – 10 minutes or until the syrup turns sticky consistency.

5. Now add 1 tsp rose water. also add ½ tsp lemon juice to prevent sugar syrup from Crystallising.

6. Sugar syrup is ready, cover and keep aside.

Now Finally make gulab jamun.

  1. Firstly, take a small ball sized dough (approx 26 grams each) and make a ball.
  2. Make sure there are no cracks on balls. else there are chances for jamun to break while frying.
  3. Heat the oil / ghee on medium flame and when the oil / ghee is moderately hot, fry the jamuns.

4. Fry the balls on low flame stirring in between.

5. Fry until the balls turn golden brown for 12-15 minutes.

6. allow the balls to cool for 2 minutes, and drop the hot Gulab jamuns into the warm sugar syrup. else jamuns won’t absorb syrup, results to hard jamuns.

7. Cover the lid and rest for 2 hours.

8. Finally, the gulab jamun has doubled in size. serve warm or cold with ice cream.

  • Pinch Baking Soda
  • Oil / Ghee for deep fry

  • 1 1/2 cup water
  • 1 1/2cup sugar
  • 3piece cardamom (Elachi)
  • 1tsp rose water
  • 1/2tsp lime juice
  • 1/4tsp saffron
For Dressing
  • 2chopped Pista dry

Procedure

Notes:

  • Firstly Prepare homemade khoya or you may use Market brought khoya .
  • Make sure that you are makin a soft dough by adding milk little by little.
  • Additionally , Maida is also a building agent . so, if Gulab jamun break while frying. then, add a tsp more maida and combine well.
  • You may stuff dry fruits inside Gulab jamun to make it more delicious.
  • Finally , Grease your hands with ghee to make crack free Gulab jamun.
